Soak the beans in water overnight.
The next day, drain them, boil them for 10 minutes, and drain them again.
Sauté the finely chopped onion in a little olive oil, then add the boiled beans, hot water, the carrots sliced into rounds, the finely chopped celery, the grated tomato, and the tomato paste. Cover the pot.
Let the bean soup simmer for about 1 hour (the cooking time depends on how firm the beans are).
Once served, you can add a few drops of lemon juice if desired.
