In a bowl, beat the eggs until they form a smooth, uniform mixture.
In another bowl, crumble the feta cheese and mix it with the anthotyro cheese.
Grease a 35 × 25 cm (14 × 10 in.) baking pan with butter. Lay the first sheet of phyllo pastry in the pan and brush it with butter.
Spread one-quarter of the cheese mixture over the phyllo (add a little salt if the feta is not very salty). Using a spoon, drizzle some of the egg mixture over the cheese and cover with another sheet of phyllo pastry.
Repeat the process three more times: cheese mixture – egg mixture – phyllo sheet.
Place the final phyllo sheet on top and fold in any overhanging edges to seal the cheese pie.
Brush the top with butter and lightly score the pastry into squares.
Bake in a preheated oven at 170°C (340°F) for approximately 45–60 minutes, until golden brown.
