Ginger has an intense spicy taste which tinkles the tongue. During the ancient times it was called “ζιγγίβερη” (ziggiberi). Nowadays, it is the basic ingredient of the famous Ginger Beer of Corfu Island. You can use it grated or in the form of a syrup in order to spice up your sweets and sauces.

500 ml of extra virgin olive oil
100 gr of ground ginger
Place the ginger in a bottle or a jar and add the olive oil.
Keep the mixture away from the sun in a cool place for 15-20 days. Then it will be ready to use!
