Katades of Samos

You need:

1½ cups of butter or margarine
1½ cups of olive oil
¾ cup of sugar
1 tsp of orange zest
½ cup of orange juice
1 shot of cognac or mastic liqueur
1 cup of ash water (You sieve ash and you boil 2 tbsp of it in 1½ cup of water for two minutes. You allow ash to settle and then use the clear water only)
1 vanilla pod
1 tsp of baking soda
1300 grams of flour

For the filling:

2 cups of ground walnuts
1 cup of ground and roasted sesame
1 tsp of orange zest
1 tbsp of cinnamon, some powdered carnation and honey watered down (with little water)

For the garnish:
Blossom water and a lot of powdered sugar


Use the mixer to blend together the butter, the sugar and the oil until the mixture is frothy. Add some of the flour. Add the baking soda diluted in the orange juice. Continue by adding the ash water, the zest, the cognac or the liqueur and the vanilla pod to the mixture.

Mix them well and gradually put in the flour until the dough is not sticky. Make dough sheets ½cm thick and cut them in circles.

Put one tsp of the filling on each of the circles and then fold them in a crescent shape. Those are your katádes. Lay a greaseproof paper on your baking tray and bake your katádes in the pre-heated oven for 30-35 minutes. Sprinkle them with the blossom water and dust them with the powdered sugar when still hot.
