Ingredients (for 6 Servings):
1 pound (1/2 kilo) black eyed peas, boiled to al dente and drained
1 green bell pepper, finely chopped
1 fresh tomato, peeled, seeded and finely chopped
1/2 bunch parsley, finely chopped
4 Tbsp. finely chopped onion
Extra virgin Greek olive oil as needed
Juice of 2 lemons
Salt and freshly ground black pepper
6 smoked mackerel fillets
1. In a large bowl, combine all the ingredients except for the mackerel.
2. Divide the salad evenly into six serving bowls and top each decoratively with a fillet of smoked mackerel. Serve.
